Snowball Cookies

Recipe

1 cup (130g) gluten free flour (I use Bob’s Red Mill Gluten Free 1:1 Flour)
1 1/2 cups finely chopped walnuts
1/4 cup (50g) granulated sugar
Pinch salt
1 teaspoon vanilla extract
1/2 cup butter, softened and cut into pieces
1 cup (115g) powdered sugar, for rolling

1. Preheat oven to 350° F.
2. Finely chop walnuts. Toast in pan over medium heat until fragrant.
3. In large bowl combine flour, walnuts, granulated sugar, salt and vanilla.
4. Add butter and blend with pastry cutter until dough resembles a coarse meal.
5. Form dough into balls and place on baking sheets.
6. Bake for 15 minutes.
7. Remove from oven and roll warm cookies in powdered sugar.
8. Cool to room temperature, roll in powdered sugar again, then enjoy!
