Peanut Butter Cups

Happy Father’s Day! I hope everyone has a wonderful day celebrating or remembering their loved ones. I am so grateful for my own wonderful Dad who never fails to tell me every cake I feed him is “the best cake he’s ever had”. As an extra special cupcake topper, I made homemade peanut butter cups! A delicious salty and sweet treat on its own or the perfect accompaniment to my peanut butter chocolate cupcakes. Recipe

Ingredients
8 ounces semi-sweet chocolate chips
2 tablespoons softened butter
1/2 cup peanut butter
1/3 cup powdered sugar
Dash of salt

1. Line mini muffin tin with 24 mini cupcake liners and spray with non-stick cooking spray.
2. In 30 second increments, microwave chocolate chips, stirring occasionally until fully melted.
3. Pipe or spoon thin layer of melted chocolate into the bottom of each cupcake liner. Place in the freezer to chill for 10 minutes.
4. Prepare the filling. In a medium bowl, combine butter and peanut butter, mix until smooth.
5. Add in powdered sugar and salt. Mix until smooth.
6. Pipe or spoon thin layer of peanut butter mixture on top of chilled chocolate layer. Freeze for 10 minutes.
7. Top peanut butter mixture with a second thin layer of melted chocolate.
8. Allow to chill in the refrigerator until set.
9. Enjoy on their own or use to top cupcakes or cake!
