Recipe

  • 1/2 cup butter
  • 2/3 cup brown sugar, packed
  • 3/4 cup almond flour
  • 1/4 tsp salt (omit if using salted butter)
  • 1 T milk of choice
  • 1 tsp vanilla extract
  • melted chocolate (for filling)
  1. Melt butter in a medium saucepan over medium heat.
  2. Add the brown sugar, almond flour, salt, and milk. Cook and whisk until sugar has dissolved, about 3 minutes.
  3. Remove from heat and whisk in vanilla extract.
  4. Preheat oven to 350°F. Let dough sit and thicken while oven heats up.
  5. Line baking sheet with parchment paper or silicone baking mats.
  6. Drop teaspoon of mixture 2 inches apart onto prepared baking sheets.
  7. Bake for 6-8 minutes until golden brown around the edges.
  8. Allow cookies to cool for 4 minutes on the baking sheets before transferring to a rack to cool and crisp up completely.
  9. While cookies are cooling, melt chocolate over double boiler or in microwave.
  10. Spread melted chocolate onto the bottom of one cooled cookie and sandwich with another.
