Bittersweet Chocolate Cookies

Description

Per my friend Brandon’s request- rich bittersweet chocolate cookies! We surprised him and dropped off a batch of these cookies at his house and got to meet his new adorable (and HUGE) dog (maintaining social distancing of course)! They taste like a fudgy brownie, in cookie form! Don’t let the crumbly appearance of the dough scare you off, it will come together and they bake beautifully! Happy Baking!

Recipe

4 oz bittersweet chocolate bar, chopped
5 T butter
2 1/4 cups (280g) gluten free flour
3 T cocoa powder
1/2 teaspoon salt
1 teaspoon baking soda
3/4 cup (150g) granulated sugar
3/4 cup (164g) brown sugar
2 large eggs, beaten
1 1/2 teaspoons vanilla extract
2 teaspoons water, more if needed
8 ounces semi-sweet chocolate chips

1. Preheat oven to 325° F.
2. Combine chopped bittersweet chocolate and butter in microwave safe bowl. Microwave for 45 seconds and stir until chocolate is fully melted. Microwave additional 15 seconds if needed. Set mixture aside to cool.
3. In large bowl combine flour, cocoa powder, salt, baking soda and granulated sugar. Whisk to combine. Add brown sugar and stir until there are no large lumps.
4. Add melted chocolate mixture, eggs, and vanilla to the flour mixture and combine. Mixture will be dry and crumbly. 
5. Add water by the teaspoon to mixture and stir until the dough comes together.
6. Add chocolate chips and mix until they are well incorporated.
7. Line baking sheet with parchment paper and preheat oven to 325° F.
8. Shape dough into discs and place on baking sheet. Place entire baking sheet in the freezer for 5 minutes.
9. Bake cookies for 8-10 minutes or until just set in the middle.
10. Allow the cookies to sit for 5 minutes before eating.
11. Store leftover dough balls in the freezer.
12. Enjoy!
