Banana Crumb Bars

Description

Another easy recipe, perfect for road trips or busy mornings! We enjoyed a fun getaway to the cabin a few weeks ago. It was beautiful and relaxing! My favorite place to be. I wanted to have an easy and delicious breakfast option that didn’t require any time or work so I made these banana crumb bars right before we drove up! It was nice to have something we could just grab and enjoy. I hope you are all having a fun and safe summer. Happy Baking!

Recipe

For the cake:
3/4 cup butter, softened
3/4 cup (150g) sugar
2 eggs
2 tablespoons sour cream
1 1/2 teaspoons vanilla extract
3 very ripe bananas, mashed
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/3 cups (175g) gluten free flour

For the crumb topping:
1 1/4 cup gluten free oat flour
1/2 cup brown sugar
3/4 teaspoon cinnamon
6 T melted butter

1. Preheat oven to 350°. Spray pan with non-stick cooking spray. I used an 8×12 inch pan.
2. Make the crumb topping. In a medium bowl, combine gluten free oat flour, brown sugar and cinnamon. Pour melted butter over and stir with fork until combined. Set aside.
3. In large bowl or bowl of stand mixer, cream butter and sugar until well combined.
4. Add eggs, one at a time, stirring well after each addition.
5. Stir in sour cream and vanilla extract.
6. Stir in mashed bananas.
7. Add in flour, baking powder, baking soda, cinnamon and salt.
8. Stir until completely combined.
9. Pour batter into pan and top with prepared crumb topping.
10. Bake at 350° for 40 minutes, or until toothpick comes out clean.
11. Slice and enjoy! Perfect for breakfast, snack, or dessert!
