Gluten Free Soft Pretzels
Description
I haven’t had a soft pretzel in probably 10+ years. They always look so scrumptious so I decided why not make my own! These warm, soft pretzels are so hard to resist straight from the oven. With the option to make them sweet or savory, they are sure to satisfy any palate. Don’t be intimidated, these pretzels are a little time consuming but very straight forward to make. Enjoy!

Recipe
Pretzels
1/2+1/8 cup (140ml) warm water (110-120°F (May need 1-2 additional tablespoons (15-30 ml)
1 teaspoon yeast
2 1/8 cups (276g) gluten free flour
1 1/2 tablespoons (20g) brown sugar
1/2 +1/8 teaspoon salt
1/2 teaspoon xanthan gum
1/4 teaspoon baking powder
1 T (14g) butter melted then cooled to 110-120°F
Half of an egg, room temperature (beat then spoon out half)
Water bath
8 cups (2 quarts) water
1/8 cup (25g) baking soda
1 tablespoon (12g) granulated sugar
Topping (optional)
Salt or Cinnamon Sugar
1. In a small bowl, combine water and yeast. Allow to sit and bloom for 5 minutes until foamy.
2. In the bowl of stand mixer, combine gluten free flour, brown sugar, salt, xanthan gum and baking powder. Stir to combine.
3. Add egg, butter and the yeast mixture to the stand mixer.
4. Mix on medium/low speed for 4 minutes with dough hook until a firm dough forms.
5. If mixture seems too dry, mix in additional 1-2 T warm water.
6. Transfer dough to a lightly greased bowl and cover with a tea towel. Allow dough to sit in a warm place to rise for 45-90 minutes, until it has about doubled in size. Mine took the full 90 minutes.
7. Preheat oven to 425°F and bring 8 cups (2 quarts) of water to a boil.
8. While the oven is preheating and the water is warming, transfer dough onto a lightly floured surface and divide into 6 equal pieces.
9. Allow the dough to rest for about 10 minutes, this will make the dough behave much more nicely when you roll it out!
10. Roll them one at a time into 14-16” long ropes and shape into pretzels (see video for how to!).
11. Once the water is boiling, add baking soda and granulated sugar. Wait for the foam to die down before adding the pretzels.
12. Drop the pretzels one at a time into the boiling water and boil each for 5 seconds.
13. Place boiled pretzel on prepared baking sheet. Brush with melted butter and sprinkle with salt if using.
14. Bake until golden brown, about 20-25 minutes for a soft, chewy pretzel.
15. If you are making cinnamon sugar flavor, brush with butter and sprinkle with cinnamon sugar just after baking.
16. Allow pretzels to cool on pans for 10 minutes before serving.
17. Eat plain or serve with your choice of dipping sauce (cheese sauce, mustard, cream cheese frosting are a few ideas that come to mind)
