Gluten Free Peanut Butter Snowballs

A perfect winter snack that doesn’t require baking! These Peanut Butter Snowballs are super fun and easy to make, plus they taste amazing (the most important part)! This recipe can be easily doubled for double the deliciousness. Enjoy!

Recipe
2/3 cup (166g) peanut butter
1 cup (115g) powdered sugar
2 T (28g) melted butter
1/3 cup (45g) gluten free graham cracker/cookie crumbs
1 1/2 teaspoons maple syrup
1/4 teaspoon salt
1 cup white chocolate chips or chopped
1 teaspoon oil
1. Line cookie sheet with parchment paper. Place wire cooling rack on top and set aside.
2. In a medium bowl combine powdered sugar, peanut butter, melted butter, cookie crumbs, maple syrup and salt. Mix until ingredients are fully combined and smooth.
3. Form mixture into balls, about one tablespoon of mixture each and place on the wire cooling rack.
4. In a medium bowl, combine white chocolate and oil.
5. Microwave in 30 second increments until fully melted and smooth.
6. Dip each peanut butter ball into the white chocolate and allow the excess to drip off. Place on cooling rack.
7. Refrigerate until chocolate has set, about 10 minutes. Drizzle with extra chocolate and enjoy!
