Gluten Free Peanut Butter Chocolate Chunk Oatmeal Cookies
Description
My absolute favorite combination-chocolate, peanut butter and oatmeal. This cookie has it all, and it is naturally flourless! Feel free to substitute semi-sweet or milk chocolate if you prefer. I love the deep cocoa flavor that dark chocolate lends. Enjoy!

Recipe
Yield 18 cookies
1 cup (240g) peanut butter
2/3 cup (133g) brown sugar
1 teaspoon (5ml) vanilla extract
2 eggs
3/4 cup (75g) gluten free rolled oats
1/2 teaspoon baking soda
1/4 teaspoon salt
4 oz chopped dark chocolate
1. Preheat oven to 350°F.
2. In a large bowl, combine peanut butter, brown sugar, vanilla extract and eggs.
3. Add gluten free oats, baking soda and salt and mix until well combined.
4. Gently fold in chocolate chunks.
5. Roll 2 tablespoons of dough at a time into balls and place 2 inches apart on a cookie sheet.
6. Bake for 9-12 minutes or until the edges are lightly golden brown.
7. Remove from the oven and allow to cool for 5 minutes on the baking sheet before transferring to a wire cooling rack to cool further.
8. Enjoy!
