Gluten Free Oatmeal Chocolate Chip Cookies

Recipe
1 1/2 sticks butter, softened
3/4 cup (150 g) sugar
1 1/4 cups (250 g) brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 3/4 cups (222 g) gluten free flour
3 cups (270 g) gluten free rolled oats
1 1/2 cups chocolate chips
1. Preheat oven to 350° F.
2. Beat together softened butter, sugar and brown sugar.
3. Beat in eggs and vanilla.
4. Add salt, baking powder and baking soda, mix to combine.
5. Beat in gluten free flour until just combined.
6. Fold in oats.
7. Fold in chocolate chips.
8. Form ~3 tablespoons dough into balls/slightly flatten to form discs.
9. Bake at 350° for 13-15 minutes.
10. Store extra dough balls in the freezer to bake fresh daily! Enjoy!
