No Bake Chocolate Oatmeal Bars

Recipe

1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups gluten free rolled oats
1 cup semisweet chocolate chips
1/2 cup peanut butter

1. Line pan with parchment paper and set aside.
2. In medium sauce pan over medium heat, melt butter.
3. Add brown sugar and cook until sugar has dissolved.
4. Stir in vanilla extract.
5. Mix in the oats and cook for 3-4 minutes, stirring constantly.
6. In 30 second increments, microwave chocolate chips and peanut butter until smooth, stirring in between.
7. Press half of the oat mixture in the bottom of the prepared pan.
8. Pour 3/4 of the chocolate mixture over the oats and smooth until even.
9. Spread the remaining oat mixture over the chocolate layer, press gently into chocolate.
10. Drizzle remaining 1/4 chocolate mixture over the top.
11. Cover pan with aluminum foil and refrigerate at least 2 hours or overnight.
12. Cut and enjoy!
