Gluten Free Double Chocolate Banana Muffins

6 T butter, melted
3/4 cup brown sugar
1 egg
1 teaspoon vanilla extract
3 mashed bananas
1 cup (130g) gluten free flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup chocolate chips 

1. Preheat oven to 425° F. Line muffin tin with liners.
2. Whisk together sugar, butter, egg and vanilla.
3. Stir in mashed banana.
4. Fold in gluten free flour, cocoa powder, baking soda, baking powder, cinnamon and salt until just combined.
5. Fold in chocolate chips.
6. Scoop evenly into muffin tin-this should be enough for 12 muffins.
7. Bake for 5 minutes at 425° F then lower heat to 350° and bake an additional 12-14 minutes.
8. Remove from pan and enjoy!
