Banana Blondies

Recipe

For the blondies:
1/2 cup butter, melted
1 cup (200g) brown sugar
dash of salt
1 egg
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 large mashed banana
1 cup (130g) gluten free flour

For the frosting:
1/4 cup butter
6 Tablespoons brown sugar
2 Tablespoons milk of choice
1 teaspoon vanilla extract
1 cup (115g) powdered sugar

For the blondies:
1. Preheat oven to 350° F.
2. Line 8×8 baking pan with aluminum foil and spray with cooking spray set aside.  
3. In medium bowl, mix together melted butter, brown sugar and salt.
4. Mix in egg, cinnamon and vanilla extract.
5. Add mashed banana and mix until combined.
6. Add flour and mix until smooth.
7. Pour batter into prepared pan and bake for 30 minutes.
8. Remove from oven and allow to cool to room temperature.

For the frosting:
1. In medium sauce pan over medium heat, melt the butter and cook, stirring constantly until butter reaches light brown color.
2. Stir in brown sugar and milk and bring to a boil.
3. Remove from heat and allow to cool for 10-15 minutes.
4. Once cooled, whisk in vanilla and powdered sugar until smooth.
5. Spread over the blondies.
6. Refrigerate until frosting has set and you are ready to serve.
7. Enjoy!!
