Gluten Free Butterscotch Blondies

Recipe

1 cup butter, melted
1 1/4 cups (250 g) brown sugar
1/2 cup (100 g) sugar
2 eggs + 1 egg yolk
2 teaspoons vanilla extract
2 1/4 cups (285g) gluten free flour
2 teaspoons cornstarch
1/2 teaspoon baking powder
1 teaspoon salt
2/3 cup chocolate chips
2/3 cup butterscotch chips

1. Preheat oven to 350° F. Line 13×9” pan with parchment paper.
2. Combine melted butter and sugars in large bowl. Stir well.
3. Add eggs, egg yolk and vanilla and stir until combined.
4. Gradually stir in gluten free flour, cornstarch, baking powder and salt.
5. Fold in chocolate and butterscotch chips.
6. Spread evenly in prepared pan.
7. Bake at 350° F for 25 minutes.
8. Allow blondies to cool before eating. (I personally think they taste better after a night in the refrigerator). Enjoy!
